Mexican delicacies

Mexican cuisine is a very zesty blend of pre-Hispanic and Spanish traditions. The basis of the people's diet is corn in various forms, especially as a tortilla. The tortilla is bread, plate and spoon at the same time. You can, for example, dip them rolled up in the thick guacamole puree, consisting of avocado, chili, jitomate (= red tomato) and onions, and you have a complete dish.

Brown, red and black beans - the frijoles - are protein donors. The preferred meats are chicken (pollo) and turkey (guijolote), both preferably in the spicy mole poblano sauce, which is made from around 20 ingredients. Grainy rice (arroz) is served as a side dish. Tasty cacti parts are often eaten as vegetables or salads.

But before you !Buen provecho! (bon appétit) you still have to choose from the menu.

Here is a selection of typical specialties:

Sopa de Lima: Lemon soup with toasted tortillas and chicken
Chile's rellenos: Green peppers stuffed with meat, fish or cheese
Enchiladas: Rolled up tortillas filled with a cheese or meat mixture – Warning: spicy!
Quesadillas: Baked tortillas with cheese filling
Taco: Tortillas filled with egg, meat, cheese, chili or vegetables, e.g. tacos de pollo (tortilla filled with chicken)
Tacos al pastor: Tacos with skewered pork
tortas: Buns stuffed with all sorts of things
ceviche: A dish of marinated raw fish with tomatoes, avocados and chili
Pollo pibil: A kind of chicken goulash with tomatoes, onions and chili
Cochinita pibil: The same with pork
Tampiquena: Flattened beef with guacamole
Custard: A kind of caramel pudding

If you don't like the corn tortillas (which can be more common among Europeans), order tortillas de harina (wheat tortillas).

And since a good meal (but not only food) also includes a drink, we have listed the most important drinks you can get in Mexico.

Beer: Beer - Corona, XX and Tecate are recommended, there are also darker beers such as Negra Modelo
Lemonade: A refreshing iced lemonade (made with mineral water) made from lime
Sangria: A mixture of red wine and lemonade
Tequila: agave brandy
Mezcal: Also an agave schnapps, if desired with the worm
Pulque: Fermented agave juice (the alcohol of the Aztecs, but it was only allowed to be drunk from the age of 52!)
Daisy flower: Tequila with lemon juice and Cointreau, often with a salt rim on the glass
Cuba Libre: Coca Cola with Bacardi Rum and Lemon
Pina Colada: Coconut milk, pineapple juice and rum cocktail
Tequila Sunrise: Orange juice, tequila and grenadine cocktail
